Our garden beds are over grown with veggies! I have been busy bringing classes out to pick their snap peas, carrots, broccoli, and cauliflower. We eat the peas and carrots straight out of the ground, but cooked up the broccoli and cauliflower in the classroom.
Now we have cilantro that is ready to be eaten, and we decided on making salsa verde. We combined tomatillos, jalapeno, garlic, and the cilantro in the blender and blend until proper consistency. We then added a dash of salt and served with tortilla chips. The kids of every grade loved it. They loved it so much, we had to eventually cut them off from eating too much.
