We’re heading off to a four-day weekend to the Sasquatch music festival, just me and my husband! While we’re there, I’m making food for one of the performers. He likes fresh seasonal veggie salads and asked that I come up with a list to choose from. Here is what I came up with, based upon his taste preference. I thought the list sounded so fresh and yummy, others might enjoy it as well.

chard salad with roasted cherry tomato and feta
shaved fennel salad with parsley and lemon
celery salad with walnut and goat cheese
grilled romaine salad with parmesan
carrot ribbon salad with lime and cilantro
cucumber ribbon salad with red onion, pine nuts and parsley
tarragon snap peas
grilled pizzas with fresh veggies, goat cheese, arugula, olive oil
buckwheat crepe with arugula, proscuitto, parmesan and egg
grilled kebabs with cucumber yogurt sauce
seared beef tenderloin with chimichurri sauce
lamb rib chops with garlic, thyme, rosemary
grapefruit mousse
mango lime salad
rhubarb strawberry crisp

I ended up making around 6-8 veggie dishes, some raw, some lighted sautéed until tender. It was fun and delicious!
