Hey Jen!

You are correct about soy not being the superfood it has been labelled to be. The phytoestrogens in soy disrupt endocrine function and the high levels of phytic acid reduce assimilation of many needed vitamins and minerals. To read more about the dangers of soy, check out the Weston Price Association website:

Hi Melissa,

I'm with Ben, are you going to add a Q&A section? :-)

I'm wondering about soy. I've been drinking soymilk and regular milk for years, (I even used to make my own), but now I'm hearing that non-fermented soy, like milk, tofu, etc, is acutally bad for me? I thought it was super-healthy, complete protein. If you have any information, I'd really appreciate it!!

Oh, God! I wish I was there. I love, love, love Cassoulet.
You might look at Argentine "Locro" for ideas to add a twist. It's another bean stew with game meats.
Good luck!

Great post! Thank you for posting.

I feel like I only recently figured out how to make great salads. Something that really helped me was something I learned by watching an episode of Alton Brown's "Good Eats". He stated to use only 1 tablespoon of dressing per one serving of a dinner salad (about 2 cups of salad). He showed to put the dressing on the bottom of the bowl, adding salad on top, and then use your hands to toss or mix the salad with the dressing. Since I started using his method, I've found I've needed less dressing, and it always comes out perfect. (I used to pour dressing on top. That doesn't work very well, and you end up often over dressing.)

I toss together a can of white beans, tuna packed in olive oil, minced fresh parsley, diced red pepper, maybe some celery or finely diced onion, green onion, and drizzle lemon juice and olive oil over the top. Salt and pepper to taste and enjoy~~
